I'm not sure what this DHCP IP helper is that you are talking about.
However, if the server's network adapter does not support nor recognize VLANs it
is not going to respond to anything but the default VLAN.
Without a network adapter that has VLAN support, you will need to have 5 different
network adapters for each subnet.
Obviously, the choice here is to make sure you have a network adapter with VLAN support
and configure it accordingly with 6 different IP addresses on different VLANs.
